- 4 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- 4 large wheat flour tortillas
- 1/2 cup shredded cheddar cheese
- 2 tablespoons butter or oil
- Optional fillings: diced tomatoes, sliced avocado, salsa, cooked bacon or sausage
- Crack the eggs into a bowl, add milk, salt, and pepper and whisk until combined.
- Heat a large non-stick skillet over medium-high heat and add butter or oil.
- Pour in the egg mixture and cook, stirring occasionally, until the eggs are scrambled and cooked through, about 3-5 minutes.
- Warm the tortillas in a microwave or on a skillet.
- To assemble the burritos, divide the scrambled eggs among the tortillas, leaving about 1 inch of space at the bottom.

- Fold the bottom edge of the tortilla over the filling, then fold in the sides, and roll up tightly to form a burrito.
